The bake
Ovens on. Sourdough shaped at midnight hits the stone. The block still dark.

A bread counter that got out of hand, and what a whole day here looks like.

The short version
Maple & Thyme started as a bread counter with four stools. The stools multiplied. The idea didn't change: seasonal Canadian cooking, made from whatever the market brought, served in a room that smells like the oven.
The sticky bun is the one people drive for. The soup changes every morning. If you're not sure, ask whoever's at the counter, they eat here too.
One day here

5:00
Ovens on. Sourdough shaped at midnight hits the stone. The block still dark.

8:00
Regulars drift in with the steam. Batch brew is bottomless until ten.

11:30
Pancakes leave the pass in stacks. Somebody always orders the benedict twice.

18:00
Short rib out of the braise. Candles lit. The room turns golden.

21:00
Galette crumbs and one more decaf. Tomorrow's loaves are already proofing.
